Zespri® Green & Gold Kiwifruit Yoghurt Muffins

I’m a lousy baker I’ve to confess and I hardly bake. Haha.
But thanks to Zespri, we’ve the chance to take on the baking challenge. We used to just bake normal and easy butter cupcakes or chocolate muffins but handling a kiwifruit pastry, this would be our virgin try 🙂

Well, another confession, we managed to get extra help to work on this recipe as well, adding the final touch to create more presentable muffins. *grin*

Zespri Organic Green & Gold Kiwifruit Yoghurt Muffins
Just follow the simple steps below & you’ll be indulging yummy muffins after about half an hour!

• 1 – 2 (150g) Zespri® Gold Organic Kiwifruit, peeled and diced (**we added Kiwi Green as well!)
• 220g plain organic flour, sifted
• 2 1/2 tsp baking powder
• 1/2 cup caster sugar
• 1/8 tsp salt
• 1 egg
• 3/4 cup vegetable oil or rice bran oil
• 3/4 cup organic yoghurt

1. Preheat oven to 180°C
2. Mix together flour, baking powder, caster sugar and salt
3. In separate bowl, mix together egg, oil and organic yoghurt. Pour wet ingredients into dry ingredients and add Zespri® Gold Kiwifruit dices. Mix lightly
4. Line muffin tin with baking paper and add mixture. Bake for 20 – 25 minutes or until they turn Golden brown
5. ** For extra deco, sprinkle some shredded coconuts on top 🙂

Note: Thanks to Ivy & KampungboyCitygal who bought us some “milk” from Chiangmai (yes it’s milkier!), it’s a perfect combination with the Zespri Yoghurt Muffins!
