The seasonal, innovative menu is a one-of-a-kind culinary experience paired expertly with wines curated by Chef Lino Sauro, which is a dramatic focus of The Library at Ritz Carlton’s dining room.
These meals provide a singular, exciting opportunity to watch the chef at work, ask questions and learn about inspiration, technique and more.

Chef Lino, from Sicily, is one of Singapore’s top chefs – ready to curate an authentic Southern Italian cuisine, in which seasonal and sustainable ingredients are used and presented in innovative and refined ways. His expertise lies in marrying contemporary culinary techniques and typical Sicilian flavours from his heritage that are distinctively displayed in the dishes he creates.
The Sicilian promotion will include exquisite dishes such as Ostrica (Oyster with sherry vinegar jelly, wasabi chips and Avruga caviar), Zuppa di Pesce Gattopardo (Signature Gattopardo seafood stew), Risone di Seppia E Cozze con Pistacchio (Squid ink rice pasta with cuttlefish, mussels, chilli and pistachio pesto), Manzo Australiano (Australian wagyu with morel mushrooms and horseradish sauce) and Cassata – his unconventional take on the traditional Sicilian Ricotta Cheese Cake. The
evening comes to a sweet conclusion with a selection of Petit Fours. Guests will also have the
opportunity to relish in Sicilian wines specially selected to be paired with the menu to further enhance the dining experience.
